Perfect Egg Salad

Easter is such a lovely time of year, but the week after I always wonder: What in the world am I going to do with all these eggs? My mom makes the best egg salad in the world (at least I think so, and my husband agrees!) and was kind enough to share her recipe.
Egg Salad
6 hard boiled eggs
½ cup Miracle Whip
2 tablespoons white vinegar
salt and pepper to taste
- Mash the eggs with a potato masher or fork.
- Stir in the Miracle Whip, vinegar, salt and pepper. If you want it more tart, add a little more vinegar. Serve on toasted bread (I like it with iceberg lettuce for crunch) and enjoy!
What could be easier? I’ll be making a batch or two of this egg salad this week, and now you can too!
